Description of Hawks at Home take-out dinner from East Sacramento’s Hawks Provisions and Public House.
Hawks Public House has reopened for dinner service (patio dining only). Reservations are required, and there are certain COVID-19 protocols in place – so be sure to check out “Toolkit for a Successful Visit” on Hawk’s website if you plan to make reservations and “dine-in”.
Not personally ready to “dine-in” as COVID-19 cases currently continue to be on the upswing, I decided to treat myself to Hawks at Home. Hawks at Home offers family style meals ready to heat and serve.

Hawks at Home
Looking over the Hawks at Home menu on the morning I planned to order dinner-to-go everything on the limited menu sounded appealing. You can pick up your Hawks at Home meal at Hawks Provisions.
Complete dinners can be ordered for two or four diners. On the menu that particular day were:
- Whole Roasted Pork Loin (with grilled cabbage & mushrooms, mustard cream sauce, farm greens with champagne vinaigrette) ($32/$60)
- Pan Roasted Salmon (with white rice, coconut fumet, baby spinach & farm greens with soy vinaigrette) ($32/$60)
Complete dinners are available for pick-up after 2:30 p.m.
I zeroed in on the House-Made Pork Ragu Pasta Sauce (slow roasted pork, rosemary, tomato, garlic, onion and carrot) ($15).
My last decision – a choice of one of the house-made pastas (single serving/$3.50):
- Radiatori (pasta that resembles a radiator)
- Rigatoni (tube-shaped pasta with ridges on the outside)
- Bucatini (thick spaghetti-like pasts with a hole running through the center)
- Casarecce (short pasta that is rolled in from the edges and lightly twisted)
Ordering on-line was easy. I chose my pick-up time and was good to go.
When I arrived to pick up my order the helpful young woman serving me gave me some advice about cooking the pasta. I had ordered the rigatoni. She suggested that I cook the pasta for three minutes and then add it to the sauce to finish cooking.
She also let me know that she had given me an extra container of the pasta, as I had ordered the single-serving but it would have been advantageous for me ($) to have ordered the combo sauce and pasta. However, I did not recall having seen that option and when I double-checked the website after I arrived back home I still did find it.
Regardless, I was especially glad I had added my usual tip to my on-line pick-up order as she was so helpful and nice.
Review
The partially-dried pasta was fresh-made. As a result, it did not take long to cook. The pork ragu sauce was thick, rich and tasty, as I had imagined it would be. I added freshly grated Parmesan cheese before serving.
The Hawks at Home menu did not specify the volume of sauce included in the order. It was a pint. While that does not seem like a lot, for me at least the sauce and two containers of pasta will definitely make two dinners and perhaps a lunch.
All in all, I was happy with my meal which I paired with a small salad made at home with home-grown tomatoes supplied by the garden of a friend.

3% Surcharge
In early June, Hawks Provisions and Public House began adding a 3% surcharge to all checks in order to provide competitive wages for “Heart of House” (back of house) staff. Payment of the surcharge is voluntary, and owners Mike and Molly advise in an on-line note that patrons need only request that the server remove the 3% surcharge from the check.
They go on to discuss “Why not raise menu prices in lieu of the 3% surcharge”, “Why Now”; “Effects of Minimum Wage Increases”; and, “Fostering the Next Generation of Chefs”. It is a good read.
Other Sacramento restaurants have similarly sought to remedy the disparity in wages between the front and back of the house by adding a extra tip line for the back of the house staff. Magpie Café, for example, immediately comes to mind.

I should note that the 3% surcharge is apparently only added to “dine-in” meals, as it was not added to my take-out order.
