Description and review of Juno’s Kitchen sourdough bread, hand-crafted daily by chef-owner Mark Helms at his East Sacramento restaurant and deli.
Juno’s Kitchen is one of my favorite places to source sourdough bread. Who doesn’t love a really good sourdough bread?
Mark Helms makes his bread using three simple ingredients: flour, water and salt. He uses the ancient practice of naturally leavening the locally milled flour through a long process of fermentation. When the dough is ready he shapes the bread and gives it a long cool overnight proof. The result as described by Helms is “a rustic loaf speckled with wheat and complex flavors”.
In need of bread recently, I called Juno’s to order a sourdough loaf ($8) and asked that it be sliced. I was offered a choice of two types of sourdough bread and chose the sourdough rye.
While I was placing my order I decided to also treat myself with a sandwich for lunch. The Panko Encrusted Eggplant Sandwich (roasted peppers, manchego cheese, arugula, basil aioli, balsamic reduction) ($11.25) is a favorite of mine. Note: Each sandwich comes with either a mixed green salad or roasted potatoes.
I was told my order was going to be ready in 15 minutes for pickup, so I headed out the door and walked to the nearby restaurant and deli. It was a pleasant day for a walk.
My order was ready when I arrived, and while the cheerful woman serving me was bagging it up she made a point of thanking me for “coming in”. We were both masked and she also wore gloves.
Juno’s is very small, so another customer who arrived moments after me waited his turn outside and entered after I departed. That was very considerate of him. I guess we will all be practicing staying “six feet apart” until a treatment or treatments and a vaccine for COVID-19 becomes widely available.
As my sourdough loaf was sliced it was wrapped tightly in saran wrap. Opening the wrapping when I arrived home I was hit with that most wonderful smell of freshly baked bread!
My Panko Encrusted Eggplant sandwich, made with the same sourdough rye bread was, as usual, delicious.
